I wanted to see what I could do with the GP Data using Tableau Public - the answer is 'not as much as I'd like' - the data sets are really too large for this platform, so I was restricted to only two months (c1m rows). Despite these limitations, Tableau allows for effective visual analysis of the data and individual Practice and Province-wide trends can be identified.
For the spatial reference, I took postcodes from the NI GP Practice Lists (http://www.hscbusiness.hscni.net/services/1816.htm) and batch processed them to render digital Lat & Long that Tableau can use.
